1. Season the Chicken
In a bowl, toss the chicken with paprika, cumin, garlic powder, onion powder, salt, and pepper until well coated.
2. Heat the Skillet
Warm a skillet over medium heat and lightly brush with olive oil.
3. Assemble the Quesadilla
Place one tortilla in the skillet. Sprinkle cheese over half of it.
Layer the seasoned chicken (and optional vegetables) on top.
Add a bit more cheese, then fold the tortilla in half.
4. Cook
Cook 2–3 minutes per side, until golden brown and the cheese is melted.
5. Serve
Remove from the pan, slice into wedges, and serve warm.
