2 cups coarse sea salt

4 cloves garlic, chopped

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1/4 cup olive oil

Freshly ground black pepper

Sour cream, for serving

Finely chopped chives, for topping

Prep: Preheat your oven to 200°C (400°F). Thoroughly scrub the potatoes to remove any dirt and pat them completely dry with a paper towel.

Make the Herb Salt: In a mixing bowl, combine the coarse sea salt, chopped garlic, rosemary, and thyme.

Create the Salt Bed: Spread half of the seasoned salt mixture evenly into the bottom of a baking dish large enough to hold the potatoes in a single layer.
